Ingredients

  • 2 lb. thinly sliced ribeye or sirlon
  • 1 tsp. Lawry’s Seasoned Salt
  • black pepper
  • 1-2 tsp. vegetable oil
  • 1/2 large yellow onion diced small
  • 1/2 large green bell pepper diced small
  • 1/2 large red bell pepper diced small
  • kosher salt
  • 12 count King’s Hawaiian rolls
  • 1/2 cup mayonnaise
  • 3 cloves garlic pressed through a garlic press or minced small
  • 12-16 slices provolone cheese mild, thinly sliced
  • 3 Tbsp. melted butter
  • pinch of garlic salt
  • dash of worcestershire sauce
  • fresh parsley chopped for garnish (optional)

Instructions

  •  Trim off any excess fat on the beef and freeze for 30 minutes. Slice thinly against the grain and season with seasoned salt and black pepper.
  •  Preheat oven to 350°F.
  •  Heat 1 tsp. oil in a pan over medium-high heat. Cook beef in batches, about 2 minutes per side. Remove and repeat as needed.
  •  Add diced onions and bell peppers to the same pan with a pinch of kosher salt. Sauté for 7 minutes until softened.
  •  Slice the rolls in half horizontally without separating. Place bottom halves in a baking dish. Mix mayo and garlic; spread on both halves.
  •  Layer half the cheese on the bottom rolls. Add beef and veggie mixture, then top with remaining cheese.
  •  Place the top rolls back on. Melt butter and mix with garlic salt and Worcestershire. Brush over tops.
  •  Cover with foil and bake for 10 minutes. Uncover and bake another 10 minutes until cheese is melted and tops are golden.
  •  Brush with remaining butter and garnish with parsley. Slice and serve hot.

Notes

Freeze meat briefly for easy slicing. You can prepare the beef and pepper mixture ahead and assemble sliders when ready to bake. Customize with hot peppers or cheese swaps like cheddar.

What’s in a Classic Philly Cheesesteak Slider? Peppers, Onions & Juicy Steak

Best Meat Cuts for Tender Philly Cheesesteak Sliders

When making Philly Cheesesteak Sliders, the right cut of meat makes all the difference. Traditional cheesesteaks use thin-sliced ribeye, known for its marbling and flavor. If you’re looking for a leaner option, sirloin also works well. Whatever you choose, freeze the meat for 30 minutes before slicing so it cuts thin and cooks evenly.

How to Build Big Flavor in Your Cheesesteak Sliders with Just a Few Ingredients

You don’t need a long list to build great flavor. Start with Lawry’s Seasoned Salt, black pepper, and a touch of Worcestershire. Sautéed onions and bell peppers bring sweetness and depth, while garlic mayo adds creaminess and punch. Don’t forget the provolone cheese it melts beautifully and keeps the sliders perfectly gooey.

Step-by-Step: How to Layer the Perfect Philly Cheesesteak Slider

Once your beef and veggies are ready, cut the Hawaiian rolls in half horizontally (keep them connected). Spread garlic mayo on both the tops and bottoms. The Freezer Trick: How to Slice Cheesesteak Meat Thin with Ease

Here’s a smart trick: freeze your ribeye or sirloin for 30 minutes before slicing. This firms up the meat, letting you cut ultra thin slices that cook quickly and stay tender. Thin cuts also soak up seasoning better and keep your Philly Cheesesteak Sliders juicy, not dry.

Make-Ahead Philly Cheesesteak Sliders + Best Reheating Tips

Want to prep ahead? Cook the beef and veggies the day before, store them in the fridge, and assemble when ready to bake. Reheat leftovers in the oven at 325°F for 8–10 minutes to restore the crispy top and melty center. Skip the microwave it makes the buns soggy.

Common Mistakes to Avoid When Making Cheesesteak Sliders

  • Overcrowding the pan – This steams the meat instead of searing it. Cook in small batches for best results.
  • Skipping the freezer step – Thin slices are key. Don’t skip the chill before slicing your steak.
  • Using dry cheese – Choose thin-sliced provolone or American for smooth, melty results.
  • Underseasoning – A sprinkle of seasoned salt and Worcestershire makes all the difference.
  • Microwaving leftovers – This ruins the texture. Reheat in the oven for best taste.
