  • 2 tbs olive oil
  • 2 tsp brown sugar
  • 2 tsp smoked paprika
  • tbs Cajun spice mix
  • 800 g piece salmon skin removed, pin-bones removed
  • 1 lemon halved
  • 2 chorizos about 250g, thinly sliced
  • 1 large onion finely chopped
  • 2 cobs sweetcorn kernels sliced off
  • 2 bay leaves
  • 2 cups 360g long-grain rice
  • 1 cup flat-leaf parsley chopped
  • 1 cup mint chopped
  • 150 g grape tomatoes
  • 120 g can black beans drained and rinsed
  • 2 spring onions finely chopped
  • Green chilli optional, to serve

Instructions
 

  • 1. Mix oil, sugar, paprika, half the Cajun mix, and salt on a plate. Coat salmon and let marinate for 10 minutes.
  • 2. Heat a large pan over medium high heat. Sear salmon 4 minutes skin-side down, flip and cook 2 more minutes. Sear lemon halves face down for 1 minute. Set aside.
  • 3. Fry chorizo in same pan for 3 minutes until browned. Set aside.
  • 4. Add onion and corn to pan and cook 5 minutes. Stir in remaining Cajun spice and cook 1 minute.
  • 5. Add rice, stir to coat, and cook 1–2 minutes until slightly toasted.
  • 6. Add bay leaves and 3 cups water. Bring to boil, cover, simmer 12 minutes. Remove from heat and let steam 10 minutes. Fluff rice and fold in chorizo and half the herbs.
  • 7. In a bowl, mix tomatoes, black beans, spring onions, remaining herbs, and juice from half the seared lemon. Season to taste.
  • 8. Serve rice on a platter, top with salmon, salsa, chilli, and squeeze remaining lemon juice on top.
